Vegetable pancakes

This week, the recipe I have for you is by Filipa Gomes: vegetable pancakes. This is one of those great recipes that I make several times at home, very quick and that you can also prepare on the weekend, to have a healthy option throughout the week and which won't take you much time.




INGREDIENTS:

  • 3 cups of grated or chopped vegetables (example: 1 cup carrots, 1 cup courgette, 1/2 cup beetroot and 1/2 cup red cabbage)

  • 1 large egg

  • 1/4 to 1/2 cup of flour

  • 1 chopped onion stalk (or some grated onion)

  • 1/2 bunch mint and 1/2 bunch coriander (all chopped)

  • 1 teaspoon of cumin

  • salt and white pepper

PREPARATION METHOD:

  • Mix everything together and form little mounds

  • Place in a heated frying pan with a drizzle of olive oil

  • Sprinkle with sesame seeds

  • Cook for 3-4 minutes on each side and serve!
