Quinoa, mushrooms and prawn risotto

My dear community, for today I have brought you a simple recipe that will please all seafood fans. The recipe for this risotto is from Guillia Calapez, from the blog "Receitas da Gi". The aspect is good but the taste is even better, I assure you!

INGREDIENTS:

  • 100gr cherry tomatoes (about 8 units)

  • 75g fresh mushrooms, sliced

  • 70g prawns 80/100 (around 10)

  • 60g raw quinoa

  • 50g chopped onion

  • 50g grated carrot

  • 100ml vegetable drink or skimmed milk

  • 10g cornflour

  • 1 light mini babybel cheese

  • 2 chopped garlic cloves

  • Seasoning to taste

  • Optional: Olive oil or coconut oil for sautéing

  • Optional: 1/5 of a vegetable stock

PREPARATION METHOD:

  • Sauté the onion together with the seasoning and chopped garlic until golden.

  • Add the prawns and the cherry tomatoes cut in half to the mixture and cook for about 3 minutes

  • Remove the prawns and set aside

  • Add the grated carrot, the raw quinoa and the mushrooms, stir again and fry for about 2 minutes

  • Cover everything with boiling water and the mixture of the vegetable drink and cornstarch. Let cook for 7 minutes

  • Add the shrimp and let cook for 5 more minutes

  • Add 3/4 of the cheese to the mixture (cut into small pieces) and mix very well for 1 minute until melted

  • Sprinkle the remaining cheese on top and serve
