Chocolate and cornflakes cookies

Here's a recipe that will please the most sweet-toothed on that side: a healthier version of cookies from the dear Mafalda Almeida. These are great for kids to take to school or for a mid-afternoon snack.



INGREDIENTS:

  • 75g cornflakes

  • 2 tbsp granola or dried fruit mix (optional)

  • 120g almond butter

  • 170g honey

  • 85g coconut sugar

PREPARATION METHOD:

  • Start by crushing the cornflakes while still in the package. It doesn't have to be a lot, we want generous chunks of cornflakes.

  • Optional: Add 2 tablespoons of granola or mixed nuts.

  • In a smaller bowl, mix the almond butter, honey and sugar. Bring to medium heat until the sugar dissolves. Remove from the heat and add to the cornflakes mixture

  • Shape your cookies into the desired shape (you can use biscuit moulds)

  • Melt dark chocolate in a water bath and decorate the cookies with the help of a spoon

  • Place in the fridge for 30 minutes to firm up before tasting. Store in an airtight jar in the fridge.
