Here's a recipe that will please the most sweet-toothed on that side: a healthier version of cookies from the dear Mafalda Almeida. These are great for kids to take to school or for a mid-afternoon snack.
INGREDIENTS:
75g cornflakes
2 tbsp granola or dried fruit mix (optional)
120g almond butter
170g honey
85g coconut sugar
PREPARATION METHOD:
Start by crushing the cornflakes while still in the package. It doesn't have to be a lot, we want generous chunks of cornflakes.
Optional: Add 2 tablespoons of granola or mixed nuts.
In a smaller bowl, mix the almond butter, honey and sugar. Bring to medium heat until the sugar dissolves. Remove from the heat and add to the cornflakes mixture
Shape your cookies into the desired shape (you can use biscuit moulds)
Melt dark chocolate in a water bath and decorate the cookies with the help of a spoon
Place in the fridge for 30 minutes to firm up before tasting. Store in an airtight jar in the fridge.
