Egg muffins

For this week, another easy and delicious recipe. The recipe for these egg muffins is from the nutritionist Diana Coutinho. It's vegetarian, but you can change some ingredients by using shredded chicken or bacon, for example. You can serve it with rice and a salad of your choice.


  • 4 eggs

  • 1/2 onion

  • 1/2 red pepper

  • 1/2 courgette

  • 2 garlic cloves

  • Olive oil

  • Oregano

  • Black pepper

  • Paprika

  • Salt


  • In a frying pan, add some olive oil and sauté the onion and garlic

  • Add the pepper and the courgette, season with oregano and paprika and let cook

  • Beat 4 eggs and season them with pepper and salt

  • Place the vegetable mixture and the eggs on top in a silicon mould

  • Bake in a preheated oven for 30 minutes at 180 degrees
